This week’s recipes come from Norma Cersine, of Babbitt. Norma shared a couple of great recipes back in December and I am delighted to feature more of her good cooking.
Norma says her family get-togethers usually have upwards of 20 people. Her son often brings a creamy wild rice soup. Norma puts her own spin on the recipe and makes it regularly throughout the cold months. It makes a nice dinner for a meal train and keeps well in a crock pot at gatherings.
Norma mentioned another favorite wild rice soup that she once sampled at the old Northern Grounds. It was a broth-based soup. As she was making her recipe, she tasted the soup before adding the milk, half & half, or cream of potato soup. It tasted just like the soup she enjoyed at the restaurant and would be a good option for anyone who is dairy free.
As for the bread, Norma has a family member who is sensitive to salt and a friend who cannot have any added sugar. She wanted to serve bread that they could eat without worry. The bread pairs well with the soup for a complete meal.
