End of the Road Recipes:

Cranberry Almond Coleslaw and Swedish Cucumber & Apple Salad

Last week’s potica salad got me thinking about a couple of other creamy salads that I make. Just about every holiday or family get-together, someone asks me to make one of these two recipes. It’s the funniest thing that out of everything I make, these are my most requested dishes. They are so simple but I think they are more interesting than plain coleslaw or cucumber salad. I think they come out the best when I don’t measure, but I was able to get a pretty decent estimate. Sometimes I like the dressings a little sweeter, other times I make them a bit more acidic. Feel free to customize them to suit your tastes. Just don’t skimp on the heavy cream. That is also my secret ingredient in potato salad and it is always a hit. I recommend keeping these salads well-chilled as they will become runny if they sit out too long.
